Preheat the oven to 350 degrees F. Heat the olive oil over medium heat in a sauce pan. Add the onions, carrots, dried herbs, pepper, salt, and bouillon granules, and cook over medium-low heat for 8-10 minutes until onions are translucent but not brown. Add the white wine and let cook until most of the liquid had evaporated.Off the heat, add the Worcestershire sauce, stock, and tomato paste. Allow to cool slightly.

In a large bowl, combine the ground meat, onion and carrot mixture, oatmeal or bread crumbs, and egg and mix lightly. Don't mash the mixture and stop mixing as soon as the majority of ingredients have been integrated.

Shape into a rectangular loaf on an ungreased sheet pan. Spread ketchup over the top. Bake for an hour.
