In a skillet, simmer garlic and onion in the olive oil until onions are translucent and garlic is lightly browned. Transfer the onion, garlic and olive oil to a large Dutch oven or kettle. Add the pureed tomatoes, crushed tomatoes and tomato paste and stir together, mixing with the olive oil, onions and garlic. Begin to simmer the sauce on as low a heat as possible, stirring frequently to prevent burning. After simmering for about 10 minutes, add the wine and herbs, stirring to disperse throughout the sauce. Simmer the sauce for at least 2 hours, stirring frequently to prevent sauce on the bottom of the kettle from burning. Add salt and pepper to taste. Additional amounts of herbs or wine can be added to taste as well. The sauce is best when simmered slowly up to 4 hours to allow the full flavor of all the ingredients to blend. Serves 8.
