Cream together butter and sugars.

Add beaten egg and vanilla.

Add flour.

Mix well.

If you are adding chocolate chips or nuts etc, add them now.

Roll into balls and put onto greased or lined tray and lightly flatten.

Cook in 180C oven for 10-12 minutes, until lightly browned.

I've added mixed spice, ginger and cinnamon, put jam (jelly) in a thumb imprint in the middle.

Everyones favorite and a huge seller at the cafe I work at, are the Choc, cherry coconut cookies: Replace 25g of the flour with dessicated coconut.

Substitute vanilla essence with coconut essence.

Throw in a handful of dark choc chips and a handful of roughly chopped glace cherries.

Another nice one is adding some orange zest, white chocolate drops and some roughly chopped macadamias.

A couple of other ideas are: lavender buds; cardamon, pistachio and rose essence (instead of vanilla); and rum and raisin (soak the raisins in the rum).
