1 c. minced onion
2/3 c. minced carrots
1 Tbsp. veg. oil
3 c. chicken broth
1 c. regular pearl barley
1/4 tsp salts optional
1/8 tsp pepper
2 c. frzn corn, thawed
1/2 c. minced fresh parsley

In a skillet over medium heat, saute/fry the garlic, onion and carrots in oil till tender.

Transfer to a greased 2-quart baking dish; add in broth, barley, salt if you like and pepper.

Cover and bake at 350'F for 1 hour.

Stir in corn and parsley.
