Combine flour, yeast, 1/3 cup sugar, butter, milk and a pinch of salt. Add 1 egg and knead, using the dough hook attachment of a mixer, until smooth. Cover with plastic wrap and let proof in a warm area for about 45 mins.

Preheat oven to 350u00b0F. Line a 13x15 inch rimmed baking tray with parchment paper. On a floured surface, knead dough again then roll out to a 13x15 inch rectangle then line prepared pan. Mix bananas, lemon juice, cottage cheese, cream cheese, custard powder and 1 1/4 cups sugar until smooth. Add remaining eggs, 1 at a time. Add chocolate chips then spread over dough and bake for 45-50 mins. Remove from oven and let cool for 2 hours.

Meanwhile, heat reserved cherry juice, remaining sugar and vanilla bean seeds and cook over medium heat for 1 min until syrupy. Remove from heat and add cherries. Allow to cool then chill.

To serve, spread cherries over cooled cake and sprinkle with toasted almonds.
