Banana Custard Pudding Recipe

   In a saucepan, combine sugar, cornstarch and salt.

   Gradually add in lowfat milk; cook and stir over medium heat till mix comes to a boil.

   Cook and stir 2 min longer.

   Stir a small amount into the egg yolks; return all to pan.

   Cook and stir till thickened.

   Remove from the heat; stir in vanilla.

   Refrigeratefor 1 hour.

   Just before serving, mix in banana.

   Garnish with mint if you like.
