2. Generously butter two loaf pans and sprinkle with sesame seeds (they'll stick to the batter).

3. Beat together sugar and butter. Add eggs one at a time, beating well after each. Add extracts and orange rind and beat until light in color.

6. Add flour mixture and pureed bananas alternately to butter mixture, beginning and ending with flour (flour - banana - flour - banana - flour). After each addition mix gently to combine, but do not beat or otherwise overmix - this toughens and dries a cake. Add nuts at end, if desired.

7. Divide batter between pans and bake 40-50 minutes. Cool 10 minutes in the pan, then remove to finish cooling.
