Lightly grease the Staub cocotte with oil, and line with parchment paper or aluminum foil.

Wash the sweet potatoes and line them up in the pan so they are not touching each other.

If the sweet potatoes are too big to fit in the pan, cut them in half.

Cover with the lid and steam-cook over medium heat.

After 10 minutes, take off the lid with one hand, and quickly turn over the sweet potatoes with the other hand, using tongs.
