1/4 lb Butter
1/2 c. Chopped onion
1/2 lb Mushrooms sliced
1 Tbsp. Chopped parsley
2 c. Coarsely crushed soda crackers
3 tsp Salt
1/2 tsp Pepper
1/8 tsp Thyme
4 x Brook trout
1/2 c. Flour
2 Tbsp. Lemon juice

Heat half the butter in a skillet; cook the onion in it 5 min.

Add in the mushrooms and cook 5 min longer.

Fold in the parsley, crackers, 1 tsp.

Split the trout for stuffing and stuff with the prepared mix; sew the openings.
