Lowfat milk; 1/4 c. Butter or possibly margarine; 1 1/2 tsp Salt; 1/4 tsp Pepper; 1 tsp Paprika; 1 1/2 c. Grated Cheddar cheese (6 ounce); 1 x Preheat oven to 425 F.

Wash and scrub potatoes; dry thoroughly.

In warm oil in medium skillet, saute/fry onion and green pepper till tender- about 5 min.

Add in sauted vegetables, warm lowfat milk, butter, salt, pepper, paprika and 1 c. grated cheese to mashed potato, mixing well with fork.

Pile lightly into potato shells, mounding high.

Sprinkle rest of grated cheese over tops of potatoes, dividing proportionately.

Return to oven; bake 15 min, or possibly till thoroughly warm and cheese is melted.
