-
1
Bring your oven to 450 F.
-
2
Slice off the top of your head of garlic.
-
3
Season it with some olive oil and salt and pepper and wrap it up in a foil pouch.
-
4
Place in the oven for about 45 minutes.
-
5
Trim your green beans (removing the stems) and get them ready to cook.
-
6
Bring a large pot of water to boil.
-
7
When the water is boiling, submerge the green beans in the water.
-
8
Let them cook for 2-3 minutes and then immediately transfer them to a bowl filled with ice water.
-
9
This will stop the cooking process and keep them nice and tender and green.
-
10
Let them bathe in the ice water for a few minutes and then lay them out on a few paper towels so they dry.
-
11
Set up three shallow bowls.
-
12
One for your flour, one for your eggs, and one for your panko, Parmesan cheese, and spices.
-
13
Season all three bowls with salt and pepper.
-
14
Get yourself a sheet pan and line with parchment paper.
-
15
Dredge your green beans in the flour, then in the eggs and lastly in the panko and seasonings.
-
16
Lay your bean fries evenly out on the sheet pan making sure not to crowd them.
-
17
(Crowding them will not allow them to crisp up as nicely).
-
18
When its done, remove your head of garlic from your oven and lower the heat to 425 F.
-
19
Bake your green bean fries at 425 F for about 15 minutes.
-
20
While they are baking, make your aioli.
-
21
Squeeze your garlic cloves into a bowl and mash them together with a fork.
-
22
In another bowl, combine mayo, olive oil, mustard and salt and pepper and add into your roasted garlic paste.
-
23
You can also blend it up in a food processor to really distribute that garlic flavor.
-
24
I personally like getting a chunk of roasted garlic so I just whisked it in.
-
25
Serve fries immediately with aioli on the side!
-
26
Enjoy!

I know you will!
