Preheat oven to 400.

Combine all ingredients in a large bowl and mix well.

Place half the mixture in a bowl of a food processor or in a blender.

Pulse until coarsely ground.

Transfer to another bowl, place remaining mixture in the food processor or blender and pulse in the same manner.

Combine both mixtures.

Using your hands, form the falafel mixture into balls about the size of walnuts and set on a baking sheet that has been coated with vegetable oil spray.

Bake for 15 to 20 minutes, turning halfway through the cooking, to brown on both sides
