Remove seeds from dates and start chopping the dates into small pieces

In a pan heat the butter and gently fry the coconut and sugar until the sugar melts and the coconut is lightly browned

Add in the chopped dates and stir until everything is well combined then take out of the heat immediately

Cut the phyllo pastry in half

Then into strips

Use a tsp to insert the filling in to the corner of the phyllo strip... Then start folding it into a triangular motion

Seep the ends of the pastry using a gentle egg wash using a brush

Brush the samosas generously with egg and place into the oven and bake, turning them over to the other side halfway through until both sides are golden and crisp
