Baked Chicken Delight

   Simmer chicken in water, seasoned to taste with salt, pepper and bay leaf until tender.

   Let cool in broth.

   Remove meat from bones and place in shallow pan.

   Saute onion in butter until tender.

   Do not let brown.

   Arrange onion over chicken.

   Sprinkle rice evenly over top and add enough chicken broth to cover.

   Cover pan and bake at 350u00b0 for 1 1/2 hours.

   Add mushrooms and cream. Cover and bake another 30 minutes.
