Bacon Wrapped Chicken Bites

   Brine the chicken breasts for 1 hour 30 minutes, 1 cup of water to 1 tbsp kosher salt. Remove and pat dry with paper towel.

   Cut the chicken into approximately 1 inch pieces. Salt and pepper.

   Mix brown sugar and chile powder in a shallow bowl.

   Wrap the chicken pieces with bacon that has been placed in the sugar mixture. Try to get quite a bit of the sugar sticking to the bacon.

   Place the rolled bacon/chicken on a baking rack which is placed in a foil lined sheet, flap side down. No need to pin with toothpicks.

   Place sheet in a cold over. Turn oven on 375 degrees and bake for 35 minutes.
