1
In a small bowl, combine all of the ingredients for the jalapeno relish.
-
2
Cover and refrigerate until ready to use.
-
3
In a small bowl, combine the crumbled bacon and grated cheese.
-
4
Use your hands to form the bacon and cheese mixture into 14 small balls.
-
5
Theyll be very coarse balls, but the heat from your hands will help them stick together.
-
6
Place the ground beef, salt and black pepper in a medium bowl.
-
7
Mix until just combined.
-
8
(Just use your hands, people.)
-
9
Now its time to make your slider patties.
-
10
Divide the beef into 14 balls (each should be about a heaping tablespoon.)
-
11
Flatten each ball into a pancake about 1/4-inch thick.
-
12
Place one of the bacon-cheese balls in the center of the beef.
-
13
Gently fold the beef around the cheese, making sure its completely sealed within the beef, and flatten the patty slightly.
-
14
(Each patty should be 1 3/4-inches in diameter.)
-
15
Heat the oil in large skillet or pan over medium-high heat.
-
16
Add the sliders and cook for about 1 1/2-2 minutes on each side until the beef is cooked through and the hidden cheese has had time to melt.
-
17
Depending on the size of your pan, you may find it easier to do this in two batches.
-
18
If you like toasted buns (who doesnt?
-
19
), now is the time to throw them on the grill or under the broiler for 30 seconds.
-
20
Place each slider on a bun and add a dollop of ketchup, if youre into that.
-
21
Top with jalapeno relish and go to town!
