Preheat the oven to 425u00b0F. Heat a frying pan and cook the bacon until crispy, then remove and drain on paper towels. In a separate frying pan heat the oil and saute the onions for 4 mins, turning regularly. Season with salt and black pepper and remove from the heat.

For the filling, mix the mustard, cumin, sour cream, salt and black pepper in a bowl. Line a baking sheet with parchment paper. Place the pastry pieces on the baking sheet and sprinkle each with 1 tsp breadcrumbs. Spread the sour cream mixture on top, leaving a 1 inch margin around the edges. Arrange the onions on top. Fold over the edges of the pastry to form a crust around the filling, then brush with the egg wash.

Bake on the bottom rack of the oven for 15-18 mins, until browned. Remove from the oven and top each tart with a bacon slice. Serve with salad.
