Ingredients: 1/2 cup Grey Poupon Dijon Mustard; 1/2 cup Honey; 1 1/2 tsp. vegetable oil; 1/2 tsp. lemon juice; 4 skinless, boneless chicken breast halves; 1 Tbsp. vegetable oil; 2 cups sliced mushrooms; 2 Tbsp. butter; salt and Pepper; 8 slices bacon, cooked; 1 cup shredded Monterey Jack Cheese; 1 cup shredded cheddar cheese; 2 Tsp. parsley; Paprika

1/2 cup Grey Poupon Dijon Mustard
1/2 cup Honey
1 1/2 tsp. vegetable oil
1/2 tsp. lemon juice
4 skinless, boneless chicken breast halves
1 Tbsp. vegetable oil
2 cups sliced mushrooms
2 Tbsp. butter
salt and Pepper
8 slices bacon, cooked
1 cup shredded Monterey Jack Cheese
1 cup shredded cheddar cheese
2 Tsp. parsley

Combine ingredients to make marinade;

Pour 2/3 of marinade over chicken breasts and marinate them for two hours.

Chill remaining marinade.

After chicken is marinated, preheat oven to 375 degrees.

Sear chicken in pan 3 - 4 minutes per side.

Place in baking dish.

As chicken is cooking, saute sliced mushrooms in butter.

Season the chicken with salt, pepper, and dash of paprika.

Stack 2 pieces of cooked bacon crosswise on each chicken breast.

Spoon mushrooms on chicken.

Spread 1/4 cup Monterey Jack cheese and 1/4 cup cheddar cheese on each breast.

Bake in pan for 7 - 10 minutes.
