Preheat oven to 375 C.

Cook bacon on medium heat until just crisp. Remove from pan and cool on paper towel. Drain fat from pan and cook apples on medium heat in same pan until slightly softened. Set aside to cool

Mix together egg, half and half, milk, thyme, salt, pepper and mix thoroughly in a medium bowl. Add bread to bowl and mix thoroughly and allow bread to soak liquid

Roughly chop bacon. Add bacon, grated cheese (reserve small amount for topping) and apples to bread mixture. After mixing, divide evenly between two ramekins. Top with reserved cheese.

Put ramekins on baking tray and put in oven for 25 min. Pudding is done when topping is golden and mixture is slightly set.
