Heat the oven to 350 degrees F.

For the cookies:

Cream the butter and sugar together. Add in the eggs 1 at a time, mixing well after each egg. Stir in the vanilla. Add the baking soda to the hot water, mix and add to the butter mix. Stir in the flour and salt until blended. Drop by the teaspoonful onto a silpat lined cookie sheet. Bake for 12-15 minutes until golden brown. Then remove from oven and allow to cool.

For the filling:

Cook dates and flour and sugar and water together in a saucepan over medium heat until it has thickened, about 15 minutes. Take off heat and stir in vanilla. Let cool.

Once the cookies are fully cooled take a tablespoon of the filling and sandwich it between 2 cookies.

Place cookies in an airtight container for 24 hours before eating. The filling will make the cookies super soft and moist.
