Transfer the cookies to lightly greased baking sheets and sprinkle with sugar. Gather the scraps, reroll the dough, and cut out more cookies. Bake in batches in the middle of a preheated 350 degree oven for 12 to 15 minutes, or until they are set and the edges are pale golden. Transfer them with a spatula to racks, and let them cool.
