Preheat oven to 350 degrees. Prepare a 9 x 13 baking dish with cooking spray and set aside. Peel potatoes and slice to 1/4 inch thick, best to use a food processor, set aside. Grate all of the cheese, set aside. Finely chop the onion, set aside. Mix flour, salt and pepper in a small dish, set aside.

Gather baking dish, place one layer of potatoes. Sprinkle layer lightly with onion. Sprinkle layer lightly with flour mixture. Repeat layers until all potatoes are used or about four layers. Gently pour pint of heavy cream over the top starting at one corner going back and forth until you've used all the cream.

Place baking dish in the oven (uncovered). Bake for one hour. Test to make sure potatoes are fork tender. If not back for another 20 minutes.
