1 teaspoon fennel seed
1 teaspoon whole cloves
12 cinnamon stick
1 star anise
¾ cup dark soy sauce
2 cups light soy sauce
4 ½ cups water
8 lbs skinless chicken legs
6 tablespoons honey
1 tablespoon chinese black vinegar
2 teaspoons cornstarch
2 tablespoons water
canola oil (as needed)

Place sugar in a pot.

Tie the peppercorns, fennel, cloves, cinnamon and anise in a cheesecloth.
