vegetable oil, for brushing

6 crusty French baguettes (mini loaves)
2 cups mesclun

Remove and discard the tough outer skin from the lemon grass stalks and roughly chop.

Using a food processor, mix all the marinade ingredients and process until smooth.

Place the chicken in a large plastic sealable bag.

Pour the marinade over the chicken.

Place the bag in the refrigerator for 1 hour.

Preheat the Barbecue to medium high - 375F.
