Place a metal bowl in the freezer 30 minutes prior to starting.

Quarter and seed the apricots. Place apricots and water in a medium size pot and cook over medium heat for about 10 minutes or until apricots are tender but not mushy. Remove pot from heat and immediately stir in sugar (sugar can be reduced to 1/2 cup or increased to 1 cup if desired). Allow the apricot mixture to cool to room temperature.

Once cooled, pour contents into a blender or food processor. Add remaining ingredients then blend until smooth. Pour mix into the frozen metal bowl and return to the freezer for 4 hours or until frozen.

To serve, you may need to remove the bowl from the freezer for a few minutes to soften a little.
