Apricot Pork Tenderloin

   Preheat the oven to 425 degrees.

   Combine preserves, mustard, and rosemary in a bowl.

   Stir well and set aside.

   Spray a baking sheet with nonstick spray.

   Then salt and pepper the tenderloin and place it on the sheet.

   Using a pastry brush, brush the apricot mixture on the tenderloin, making sure to coat the entire piece of pork.

    Use all but about a 1/4 of the mixture.

    Roast for 40-45 minutes at 425 degrees.

    Halfway through, brush the remaining mixture on the pork.

    Remove from the oven.

    Let it stand for 5 minutes before cutting diagonally.
