Applesauce Recipe Sandsquish

   Peel, core and coarsely chop the apples.

   Combine the chopped apples, sugar and pumpkin pie spice in a 6-cup glass bowl.

   Stir to mix.

   Cover with plastic wrap and set in a microwave oven.

   Cook with 650 watts for 5 minutes.

   Remove from the oven, uncover and stir in butter and optional brandy.

   Recover and cook until fruit is completely soft, about 3 minutes.

   Remove from the oven, uncover and mash mixture with a potato masher.

   Let cool to room temperature, then chill.

    Serve with roast pork or pork chops, or with cookies for dessert.
