* Cut your apples into wedges and transfer to a medium sauce pot.

* Barely cover the apples with water and add the vanilla bean and cinnamon stick.

* Cover the pot and bring to a boil. Then remove the cover and allow everything to simmer till apples appear to be falling apart.

* Do not drain. Remove apples from heat and carefully take out the vanilla bean and cinnamon stick. Add the brown sugar and salt.

* With a potato masher or fork mash up the apples until they obtain the desired consistency. Serve hot or cold.
