Dry currants or possibly raisins; 1 med Apple, cored and grated

2 Tbsp. Lightly packed brown sugar
1/2 tsp Cinnamon
1/2 tsp Nutmeg
3 med Apples, peeled, cored sliced
3/4 c. Flour
1 tsp Baking pwdr
1/2 tsp Salt
1/3 c. Granulated sugar
1 x Egg
1 x Egg white
1/4 c. Oil
1/4 c. 2% lowfat milk
1 tsp Vanilla
1/2 c. Dry currants or possibly raisins
1 med Apple, cored and grated

Heat the butter in a small glass c. in the microwave, stir in brown sugar, cinnamon and nutmeg.

Spread as proportionately as possible over the wax paper.

Arrange apple slices (or possibly chunks) in butter sauce.

Combine flour, baking pwdr and salt on a piece of wax paper or possibly in a mixing bowl.

In second bowl, beat together sugar, egg, egg white, oil, lowfat milk and vanilla.

Combine with dry ingredients till just blended.

Mix in currants (or possibly raisins) and grated apple.

Leave the skin on the apple for extra fiber if you are using a food processor for the grating.

Pour into pan over apple layer.

Bake at 350 F for 25 to 30 min or possibly till cake tester inserted in center of cake comes out clean.
