2 Tbsp. extra virgin olive oil
1 c. minced onion
1 x clove garlic, chopped
2 x 10 oz pkgs. pureed squash, defrosted
4 c. chicken stock

1 c. cream
1/2 c. lowfat sour cream

Heat extra virgin olive oil in a medium-sized soup pot set over medium-low heat and saute/fry onion and garlic for 10 min.

Add in squash, stock, apples, lemon juice, thyme, salt and white pepper and bring to a boil.

Reduce heat and simmer for 20 min.

Puree soup.

Stir in cream and heat for 10 min longer over low heat.

Combine lowfat sour cream with the chives and pepper.
