2 Tbsp. vegetable oil
3 med Granny Smith apples peeled, minced
1 x potato peeled, minced

1/4 c. white wine
5 c. chicken stock
4 c. grated mild Cheddar cheese

Heat oil in large saucepot; add in apples, potato, celery, onion and thyme.

Saute/fry 10 min.

Stir in wine and simmer 2 min; add in stock and simmer 45 min.

Return to saucepot; over very low heat, and stir in cheese, cream, nutmeg, salt and pepper to taste.
