1. Preheat the oven to 350oF. 15 minutes before baking.

2. Juice your lemon into a large bowl. Peel and cut the apples no thicker than 1/4 inch. Use a melon baller to dig out the core of the apples. Mix the apples with the lemon juice. Mix in the cinnamon sugar.

3. Stir into a medium bowl the flour, baking powder, salt and suar. Add the oil and the cold water to the dry ingredients. Mix into a soft dough.Divide and roll out the bottom crust onto the pie plate. Sprinkle the bottom crust with a little flour. Fill with the apple mixture. Roll out the top crust and add it. Pinch the edges and sprinkle with cinnomon. Prick the top of the crust with flour.
