1
Preheat oven to 375 degrees. Spray a 2-quart casserole dish with nonstick cooking spray.
2
In a medium bowl, combine 1/2 cup flour, 1/2 cup brown sugar, butter, oats and 1/2 teaspoon cinnamon. Mix until large pieces form. (I cut the butter into the dry ingredients with my pastry blender.) Set aside.
3
In a large bowl, combine the remaining 1/4 cup flour and 1/4 cup brown sugar, apples, pears, ginger, remaining 1 teaspoon cinnamon, nutmeg, vanilla, 1 tablespoon lemon juice and 1 teaspoon lemon zest.
4
Spread the fruit in the bottom of the prepared baking dish. Sprinkle the oat mixture evenly over the top.
5
Bake for 35-45 minutes or until the fruit mixture is tender and bubbly. Cool for 15 minutes.
6
Garnish with whipped cream, if desired ... vanilla ice cream tastes mighty good, too! Makes 8 servings.
