Add in the rum or possibly lemon juice and sugar.

Mix well and let stand till ready to use.

Beat Large eggs with the sugar and cool water, then add in the apple mix.

Cook according to directions, fold and serve.

To flame the omelette, sprinkle top with 2 Tbsp.
