Put the 9 paper muffin cups into the wells of a 12 hole muffin pan. Distribute the cake mixture evenly between the muffin cups. Bake them for about 20 mins and leave them to cool on a wire rack for 1 hour.

Beat the egg white and gradually fold in 2 1/2 cups of powdered sugar and the red food coloring. Smash the jelly beans and roll out thinly on a work surface sprinkled with powdered sugar, and cut out 9 small leaves. Coat the muffins evenly with the red icing. Insert a piece of cinnamon stick as a stalk and a jelly bean leaf on each muffin. Let the icing dry and serve.
