Ingredients: 3 cup Flour; 1 tsp Bicarbonate of soda; 1 1/2 tsp Baking powder; 1 3/4 cup White sugar; 1 1/4 cup Vegetable oil; 3 Eggs; 2 tsp Vanilla extract; 3 Apples ( I like to use Granny Smith ) peeled and chopped; 1 1/2 cup Pecan nuts. Roughly chopped; 2/3 cup Sour cream; 3/4 cup Brown sugar; 3 tsp Butter; 200 ml Thick cream; 1 1/2 tsp Cinnamon

3 cup Flour
1 tsp Bicarbonate of soda
1 1/2 tsp Baking powder
1 3/4 cup White sugar
1 1/4 cup Vegetable oil
3 Eggs
2 tsp Vanilla extract
3 Apples ( I like to use Granny Smith ) peeled and chopped

2/3 cup Sour cream
3/4 cup Brown sugar
3 tsp Butter
200 ml Thick cream
1 1/2 tsp Cinnamon

FOR THE CAKE, Heat the oven to 175F Celsius.

Sift flour, baking powder and bicarbonate of soda together

Beat the sugar and oil together in a large bowl.

Add eggs and vanilla.

Mix well

Mix in the flour, baking powder and baking soda.

Alternate with cream.

Don't over mix.

Fold in apple and nuts.

Pour batter into prepared bunt pan and bake for an hour.

Test with a cake tester or toothpick to ensure its done.

Place on rack while you make the glaze.

THE GLAZE.

In a pot on top of the stove, melt the butter.

Add the sugar and cinnamon,stirring often.

When sugar has melted add cream, stir well until the mixture has thickened slightly

Remove cake from pan onto some tin foil or plate.

Gently stab some small holes into the cake so that glaze can seep in.

Pour glaze over whilst cake is still warm.

Serve warm with ice cream, or cold with cream
