In the meantime, wash, slice and chop the apples. Stir the apples into the batter and spoon the batter into the muffin pan liners. Bake them for about 25-30 minutes. Take them out and let them cool for about 10 minutes.

For the frosting, beat cheese, butter and lemon rind in a small bowl until light and fluffy. Gradually beat in sifted sugar and beat until smooth. This frosting keeps for 4-5 days if you put it in the fridge.
