Amaretto Rice Pudding Recipe

   Soak the peaches in the Amaretto for 10 min.

   Set aside.

   Combine the rice, lowfat milk, butter, and sugar in a saucepan.

   Bring to a boil, lower the heat, and cook till the rice has absorbed the lowfat milk but the mix is creamy, about 15-20 min.

   Stir constantly so the lowfat milk does not curdle.

   Add in the peaches and cook 1 more minute.

   Remove from the heat and add in Large eggs.

   Return to the heat and cook for about 5 min till the mix is creamy.

   To serve, sprinkle individual dishes of rice pudding with cinnamon and nutmeg.
