To make the caramelized pear, combine the butter and sugar in a large frying pan over a medium heat. Saute the pear for 4-5 mins, until just tender. Allow to cool to room temperature. Drain, reserving liquid.

Sift the flour and cinnamon into a bowl. Stir in the ground almonds, blanched almonds and sugar.

In a separate bowl, whisk together the milk, butter, eggs and vanilla.
