Almond Cookies

   Preheat oven to 180 degrees Celsius.

   Beat the egg whites until stiff, add the sugar, ground almonds, flour, and cinnamon. Mix well.

   Spoon dough onto baking tray lined with parchment paper, and sprinkle almond flakes on top of each piece. Flatten each piece with a fork.

   The portions should be slightly separated because the dough will expand during baking.

   Bake for 20 minutes.
