Aligator With White Wine Sauce Recipe

   Heat a knob of butter with some oil in a frying pan and lightly cook the shallots.

   Before the shallots brown, add in the alligator fillets and turn up the heat.

   Cook for 1 to 2 min while stirring and then add in the wine.

   The liquid in the pan should be cooking intensely.

   After 30 seconds, add in the cream and season.

   Continue cooking and stirring so which the ingredients combine and reduce, approximately 30 seconds.
