Alcazar Flat Sponge Cakes

   Preheat the oven to 160 degrees Celsius.

   Grate the lime zest.

   Separate the egg whites and yolks.

   Mix the lime zest and yolks. Add a pinch of cinnamon.

   Whip the egg whites adding a pinch of salt. Once they resemble foam, add the sugar slowly and continue beating to obtain a soft meringue.

   Fold the egg yolks into the meringue.

   Sift the flour over the mixture and fold in.

   Place the batter in a pastry bag with a large tip.

   Create the flat cakes onto greased parchment paper.

    Sprinkle with sugar and cinnamon, if desired.

    Bake for 10 to 15 minutes, or until the borders are golden brown.

    Place in a cooling rack and serve.
