   Albondigas Directions:

   1. Saute the onions, peppers and garlic in the olive oil and let the mixture cool

   2. Combine the mixture with the chicken, cumin, cilantro, rice, egg, salt and pepper.

   3. Roll into meatballs.

   4. Bring the chicken broth to a boil and simmer the meatballs until cooked.

   To Finish Albondigas:

   * simmer the cooked meatballs in salsa, adding fresh cilantro is desired.

   * place meatballs on slider rolls and top with grated cheese.
