Cut bananas into slices, then quarters. In a skillet over medium heat, cook the bananas with the brown sugar until sugar has turned into a caramel, about a minute. Add cinnamon and mix well. Pour in the rum and quickly (but carefully) flambee. (This can be done by tipping the skillet so that the rum makes contact with the gas flame, or with a long-handled lighter.) Allow the flame to cook the bananas gently for a few seconds; it will go out on its own. Remove from heat and enjoy as an ice cream topping or perfect aebelskiver filling. Remember to lick the spoon-it's a crime not to.
