Ingredients: 2 c. 15 bean soup mix; 2 qt. water; 2 ham hocks or 4 beef bouillon cubes (some of each is better); 1 1/4 tsp. salt (use less if bouillon cubes are used); 1/2 tsp. pepper; 1 pt. tomatoes; 1 large onion, chopped; 1 clove garlic, minced; 1 pod hot pepper; 1/4 c. lemon juice

2 c. 15 bean soup mix
2 qt. water
2 ham hocks or 4 beef bouillon cubes (some of each is better)
1 1/4 tsp. salt (use less if bouillon cubes are used)
1/2 tsp. pepper
1 pt. tomatoes
1 large onion, chopped
1 clove garlic, minced
1 pod hot pepper
1/4 c. lemon juice

Wash soup mix and place in large pot.

Cover with water 2 inches above beans.

Soak overnight; drain.

Add 2 quarts of water, ham hocks, salt, pepper and bouillon cubes.

Bring to a boil, covered, and simmer 1 1/2 hours or until beans are tender. Add tomatoes, onion, garlic, hot pepper and lemon juice.

Simmer for 30 minutes, stirring often.

Remove ham hocks, debone and return to soup.

Yields 2 1/2 quarts.
